Lasagna Recipe

Hmm…as I was typing that, I was suddenly struck with the thought of “How exactly DO you spell that L word…with an ‘e’ at the end or an ‘a’?” I’m going to go look that up, be right back…well Merriam-Webster says either way is good, so I’ll stick with the one I like, which is Lasagna.

Anyway, I’ve had requests for my lasagna recipe. That could get tricky since I don’t use a recipe and I made it up myself…but I’ll try to give y’all a basic recipe to mess with:

1 Box No-Boil Lasagna noodles (you won’t use the whole box)

2 large cans Hunt’s Tomato Sauce (I like Hunts b/c it has no chunks in it, but go with whatever sauce your family likes.)

1 regular size container of sour cream

1 package feta cheese

1/2 package shredded Amish Baby Swiss cheese

1/2 package Monterrey cheese shredded

1 pkg shredded mozzarella cheese

Italian seasoning

Garlic Powder

Onion Powder

Salt and Pepper

Parmesan Cheese, optional-not included in the seasonings for hamburger

1 1/2 lbs hamburger, cooked and seasoned with the above seasonings, crumbled, then drained thoroughly

In a small bowl, combine the sour cream, feta cheese, and Amish Swiss cheese. I use a 9×15 pan for this-yes, 9×15, not 13, so you may wish to split this into 2 smaller pans and freeze one if your family doesn’t eat huge amounts of food like mine does or if it’s just the two of you at home or whatever. Anyway, spray the bottom of the pan with cooking spray, and spoon some sauce to lightly coat the pan bottom, then layer some noodles in a single layer on the sauce (no, you don’t need to pre-cook the noodles, I promise!). Next, layer about 1/2 the hamburger, then the feta mixture, then the other cheeses, then sauce, then noodles, then sauce, then the rest of the hamburger, the rest of the feta mixture, some of the remaining cheeses, sauce, noodles, sauce, and the last of the cheeses. You may sprinkle parmesan cheese on top if you want before baking.

Bake in a preheated oven at 400 degrees for approximately 30-45 minutes or until sauce is bubbly and cheese is slightly browned. I’m totally guessing on ALL of this except for the cheese and hamburger amounts here, people…I normally don’t even time this, and I forget from time to time how hot I put the oven the last time, lol, so you may want to start checking the oven sooner than this to be sure it’s not burning. If your cheese gets too brown, but your noodles and sauce don’t seem done yet, carefully put some aluminum foil over it and put it back in the oven. To freeze, I suggest pre-baking for 1/2 the time you intend to cook it, then cover and freeze, and then just bake till bubbly when you’re ready for lasagna again.

Now I realize feta cheese sounds weird in lasagna. I promise you, though, it is sooooooooo good. My bunch doesn’t like feta cheese at all, but in this, they LOVE it. Have some skeptics in your house? Don’t tell them what’s in it till AFTER they’ve told you what a wonderful meal it was, hehe…it always works for me!

I also found pictures that I took of the flowers Bryan got for K that weekend…when he saw them he immediately knew she’d love them, because they are so bright and colorful. That’s all she talked about all weekend. She kept going up and sniffing them till I thought her ‘sniffer’ was gonna fall off, lol. I wish I would’ve taken pics of them when they were fresh but I didn’t think of it till several days later.

We got to see our soldier!

Okay, so I know it’s been a long time since I’ve posted, but I’ve been busy (and sick), and I just haven’t taken the time to post. Sorry about that! Anyway, I just wanted to share that I got to go visit my hubby a couple weeks ago and it was sooooo nice to spend some time with him and see where he’s living and working, meet his friends, and generally just lock ourselves in the room, lol. I can’t say for sure, but I think his favorite part was that he finally got to eat some of his wife’s cooking! While I was there I made him steak, stroganoff noodles, hm breaded veal patties, hm cheeseburger macaroni and veggies. I even was able to leave him some leftovers, which made him VERY happy. Another cool thing we were able to do was invite another Chaplain who hadn’t had family visit yet to have lunch with us so he got some home cooking, too, one day. That was kind of neat.

Then, while there, I was able to talk one of his superiors into giving him a weekend pass for the weekend of President’s Day, and the Lord blessed us with being able to find a cheap flight to get him home to see his daughter that weekend. The unfortunate part of this all was that Bryan and I ended up sick from the climate changes (from 70 degrees in SC to 20 degrees here), but it was still just so nice to be together.

That weekend I was like supercook, trying to fit in as many homemade meals as possible. I have a few pics of some of it that I thought I would share:

I didn’t get a picture of my prize-winning chili, sorry about that! Sunday night at church was our Chili Cook-off, in which I won Judge’s Choice (there were 3 judges and it was unanimous) and Hottest Chili (but one of the judges later told me that there was one chili there that she thought was MUCH hotter than mine). It was nice that my family was there to see me win this, too.

Then after church Bryan got to have roast that I think was my best ever…it was just sooooo good. I also missed getting pictures of the steaks we had that Saturday, but K complimented me on them profusely!

So there’s a little update for y’all, sorry it took so long! I really thought I would blog more while dh was gone, but I guess not. I’ll try to get some pics of us together next time I go visit him at Ft. Jackson!
